Beetroot Halwa Recipe

Beetroot halwa this is one of the easiest sweet recipe you can do it .My first attempt on sweets was beetroot halwa and carrot halwa for my mom's birthday long back.The carrot halwa came very good but i didn't like beetroot halwa becoz of too much beetroot flavor.I haven't used milk in both the sweets and i cooked carrot and beetroot before making and pureed it. Later i never tried beetroot halwa.

 Few weeks back we went to a restaurant which has a village style healthy cooking dosa's ,idly's and poori's made up of millet.There i saw beetroot halwa in the menu and we thought to try it ,but my luck its over already ,then i thought that i should try at home once. 

The recipe i given below have equal ratio of Milk and Beetroot i.e 1:1 ratio.The preparation method and taste is almost same as carrot halwa.

Beetroot Halwa

Recipe Cuisine: Indian | Recipe Category: Sweets
Preparation Time:25 mins | Serves: 2

Ingredients


Beetroot - 1 1/2 cup (grated)

Milk-1 1/2 cup

Sugar-1/2 cup

Ghee-3 tbsp

Elachi | Cardamon powder- 1/2 tsp

Nuts of your Choice

Method:

  1. Always use a Thick bottom pan to prepare sweets.
  2. Add the grated beetroot in the pan and saute till all the water in beetroot evaporates.
  3. 2 add
  4. Its not mandatory that you need to completely dry the moisture.Now add in the milk and cook till the milk reduced completely.
  5. It takes - 8-10 mins.Once reduced add in the sugar ,elachi powder and cook till it becomes thick and glossy.
  6. 2 add
  7. Now add in the ghee and reduce the flame a bit and keep mixing till it become sticky and thick halwa like consistency as in the pic.
  8. 2 add
  9. Now in a seperate pan fry the nuts and add it to the halwa.
  10. Yummy beetroot halwa is ready.....

Notes:

  • The beetroot and milk should be on 1: 1 ratio.
  • Once cool down the halwa will be thickened .so remove from flame accordingly.
  • I used pistachio and cashew .use any nuts of your choice.
  • You can also used unsweetened khoya to increase the richness.But milk itself enough for the richness.

Kaju Katli | Kaju Burfi | Cashew Fudge

Kaju katli | Kaju Burfi | Cashew Burfi (Cashew Fudge) is a very popular Indian sweet prepared using Cashew .As Diwali is approaching i wanted to post some sweets that will never get bored and here is the one... Try and let me know your comments. 


Kaju Katli | Kaju Burfi

Recipe Cuisine: Indian | Recipe Category: Sweet
Preparation Time:20mins | Serves: 2-3

Ingredients


Cashew-1 cup(at room temperature)

Sugar-1/2 cup

Rose petal/Rose water/Saffron -few (op)

Ghee/Cocunut oil for greasing

Water- 7 tbsp

Method:

    2 add
  1. Make sure the cashew is at room temperature.Grind the cashew into a fine powder(stop in between to avoid oily cashew) (use big jar instead of small).
  2. Now keep ready with the greased plate or a pan with ghee .
  3. In a thick wide pan (non stick preferable)add the sugar and water.
  4. 2 add
  5. Once the sugar dissolved and started bubbles, add cashew powder and mix well to remove lumps and cook in a low flame.
  6. 2 add
  7. Once the cashew starts thickening keep mixing till it come together non sticky along with ladle (ref pic).Now switch off the flame and transfer it to a greased pan or plate.
  8. 2 add
  9. Now add little ghee and chopped rose petals and mix well with ladle,once u able to handle the temperature start kneading it else the burfi will start crumbling.
  10. 2 add
  11. Once you knead it well like a dough,using a butter/parchment paper on top and roll it into thin sheet using rolling pin.
  12. Once it cool down completely, cut it into diamond shape.

Notes:

  • Cashew should be at room temperature and while grinding don't make it oily
  • Don’t wait for the sugar syrup to get single string sugar syrup .Bcoz if you missed the proper consistency then burfi will get crumbled.
  • So it’s better to add cashew powder before the sugar syrup get single string consistency.
  • If the mixture is so hot and u can’t handle the heat, try to knead with 2 ladles at least else it will get grainy lumps.
  • Roll into desired thickness and size.
  • If using the rose water add with sugar.
  • If using saffron, roast in a pan and powder it and use while kneading..

Dry Fruits Burfi | Dry Fruits Ladoo (Sugar free)

      Healthy Dry fruit Burfi with out Sugar.You can add any dryfruits to make this burfi,but dates is an important ingredients and it was the one helps to fold all the ingredients together.
      Usually i make round ladoo's or cut into burfi's,But this time as i am giving this to my Pregnant frnd Visha , i made this appealing coins and it came out very well.I made these pics 3-4 months back and i wanted to post this before my india trip but ,busy with my LO Shn always. And my Frnd got delivered to cute baby girl also,but now oly i got time to post it ;).

Dry Fruits Burfi(Sugar Free)

Preparation Time:45 mins | Serves: many

Ingredients


Dates-1 cup

Fig-1/2cup(op)soaked

Any nuts of your choice-1/4 cup each

Elachi-7-8

Khasa khasa/Poppy seed-2 tbsp

Honey-3 tbsp(op)

Ghee-2 tbsp

Method:

  1. Wash and soak the figs overnight and grind it into a paste by adding little water.
  2. 2 add
  3. Dry roast the nuts (make sure no change in color).
  4. Chop the Nuts and dates roughly.
  5. 2 add
  6. In a blender, powder the elachi with some sugar and seive it into the chopped nuts .
  7. 2 add
  8. Now in a hot pan add ghee,then add ground fig and cook well till all the moisture evaporates(refer pic).
  9. Add Dates now and mix well.Now the dates started to dissolve into fig.
  10. 2 add
  11. Cook till the moisture evaporates.Now add honey/jaggery or any sweetner.
  12. 2 add
  13. Now add in the chopped nuts mixture and mix well(i used 2 big spoons to mix well).
  14. When its mixed completely switch off the flame and allow it to cool.
  15. 2 add
  16. Method:1

  17. If you want to make it simple just make round ladoo's of it.
  18. Sprinkle some khasa khasa on your hands while making ladoo's.
  19. Method:2

  20. Take a square tin and grease it with ghee , add the hot burfi mixture into it and press completely,sprinkle khasa khasa on top and press it .
  21. Once it cool down completely make burfi's .
  22. Method:3

  23. Make a cylindrical shape and sprinkle some khasa khasa and using a aluminium foil roll it fully ,as it will help to roll the cylinder burfi to get perfect shape.(refer pic)

  25. And keep the rolled cylinder in fridge for 1 hour.
  26. After 1 hour take the cylindrical burfi out from fridge and cut into round coins(refer pic)
  27. 2 add
  28. It will be though to cut as it is hard. But the outcoem is very appealing. .
  29. Healthy and sugar free Burfi is ready.

Notes:

  • Nuts of your choice-walnut,cashew,badam,pista,Pumkin seeds,Sunflower seeds,melon seeds..etc..
  • Dry Fruits of your choice-Dates is mandatory other than that you can use any like fig,cranberry,prunes,apricot,mango,dry grapes..etc..
  • Honey is optional here.If you want replace it with sugar,jaggery,palm sugar..etc..
  • khasa khasa is just for decoration.
  • For me it came around 20-25 coins.
