Pandan & Coconut Jelly Perfect dessert for kids for this summer.Now it march oly but summer started to get worse.Here in Singapore sunny & rainy is usual but this year it worse than previous,i heard in malaysia they declared school holidays bcoz of too much hot.I dint have to say about India...Plz doo some precautions before summer get worse friends,especially for kids.....
These are the tips to find how hot the climate is and cure to get rid of hot(got this from my friend in watsapp)
-keep a candle outside the house to check the temp \
-keep a bowl of water inside the house to keep the humidity inside house.
-eat lot of fruits, drink plenty of water,eat more of cooling foods.
-Its not too late to do it ... plant more tress to save our future...
Agar agar is derived from seaweed mostly used as a thickening agent in ice creams or as a vegan replacement for gelatin...

Pandan & Coconut Jelly

Ingredients for Pandan layering
Pandan Leaves-4 to 5 leaves
Water- 2 cup(1 for pandan leaves juice + 1 for mixing agar agar)
agar agar - 1tsp
Sugar- 1/2 cup
Water- 2 cup(1 for pandan leaves juice + 1 for mixing agar agar)
agar agar - 1tsp
Sugar- 1/2 cup
Ingredients for Coconut milk layering
Coconut cream or thick coconut milk- 1cup
Water- 1 cup
Sugar- 1/2 cup
Agar agar- 1 tsp
pinch of salt
Water- 1 cup
Sugar- 1/2 cup
Agar agar- 1 tsp
pinch of salt
Method for Pandan layer:
- Wash the pandan leaves well and cut them into small pieces and blend them well along with 1 cup water.
- Extract the juice use a cloth or fine strainer.
- In a pan add 1 cup water and allow it to boil,when it starts boiling add in the agar agar powder and mix well till it dissolves.
- Now add in the sugar and mix well till it dissolves.
- Now add the pandan juice & mix well till it combines and remove from heat..
- When it is hot pour it into a half mold and keep it in the refrigerator til it set(pics given below).
Method for Coconut layer:
- In a pan add 1 cup water and allow it to boil,when it starts boiling add in the agar agar powder and mix well till it dissolves.
- Now add in the sugar,salt and mix well till it dissolves.
- Now add the Coconut cream & mix well till it combines and remove from heat..
- When it is hot pour it into remaining half set mold and keep it in the refrigerator til it set.
Notes:
- You can use any juice ,milk shakes ,cream,fresh fruit pieces into it to prepare this jelly.My personal likes are mango ,strawberry which goes well with coconut jelly.
- U can also use gelatin to make this ,but its not good for the health so used agar agar.
- To be frank i dint like the pandan flavor ,but did this for my kid as we use fresh pandan leaves .
