Rava ladoo

Recipe Cuisine: Indian | Recipe Category: sweet

Preparation Time:30 mins | Serves: 10-12

Ingredients



Rava/Sooji -1cup

Sugar-1/2 cup

Dried coconut/powdered nuts-4 tbsp

Cashew-10

Raisins-10

Cardamom powder -1/4 tsp

Ghee-2 tbsp

Milk-2 tbsp

Method:

  1. In a wide pan add ghee,once the ghee melted add in cashew, raisins and fry till golden.
  2. Add in sooji /Rava (preferably kesari rava) and saute till the rava fryed in ghee.
  3. now add the sugar and give a quick mix.
  4. Gradually add milk( can replace with water also) and mix well to make sugar dissolve ,this stickyness helps to hold ladoo in shape.
  5. once mixed well remove from flame and allow it to cool for few mins to handle easily and not to burn your hands.
  6. Shape it and store in a air tight container for 4-5 days (if you are not using milk and coconut ,it can stay more than a week).


Notes:

  • For ethnic Flavour can add cardomon powder.
  • Can use dried & powdered coconut and powdered almond or any nuts of your choice to make it more healthy and to try different variation

Sweet Corn Masala | Gravy

Sweet Corn Masala

Recipe Cuisine: Indian | Recipe Category: Side dish
Preparation Time:30 mins | Serves: 3

Ingredients


Sweet Corn - 1 Cup (Fresh | Frozen)

Onion - 1 1/2

Tomato - 2

Ginger & Garlic Paste - 1 tbsp

Cashew - 5

Kashmiri Redchilli Pwdr - 1 tbsp

Coriander Pwdr- 1/2 tbsp

Garam Masala Pwdr - 1 tsp

Kasuri Methi - 1 tsp

Tomato sause - 1 tbsp (op)

Fresh Cream - 3 tbsp

Sugar - 1 tsp(op)

Salt

Butter - 2 tbsp

Oil - 1 tbsp

Method:

  1. In a hot pan add oil followed by onion.Cook onion till it become transulent.Now add in tomato and cook till it become Mushy.
  2. Allow it to cool and grind into a smooth paste..
  3. Also grind cashew into paste and keep it aside( if you wish soak the cashew before grinding for smooth paste).
  4. Now in a hot pan add buter then onion,cook till its golden brown.Now add G&G paste and cook till it raw smell disappear.
  5. Now add the Ground onion and tomato paste and cook for few mins.
  6. Add coriander powder,kashmiri Red chilli powder mix well and cook for 5-6 mins,in between mix to avoid burning(if needed adjust water accordingly) .
  7. Now add the ground cashew paste,garam masala,sweet corn and salt.Allow it to cook for 3 more mins.
  8. Now adjust the salt and water (as the gravy become thick after adding cream).
  9. Add crushed kasurimethi,tomato ketchup,cream ,sugar and give a quick mix.
  10. Switch off and garnish with coriander leaves.

Notes:

  • If you are not using kasmiri red chilli powder ,you wont get deep red color gravy.
  • Adding tomato ketchup to the creamy gravies give extra taste like hotel style and glossy finish to the gravy.
  • Replace cream with 1/4 cup full fat milk.
  • If not using garam masala powder ,use whole garam masala spices and fry in butter.

Coconut Burfi Using Jaggery

Preparation Time:45 mins | Serves: many

Ingredients


Dried Coconut-1 Cup

Sugar 1/4 cup

Jaggery-3/4 Cup

Ghee- 1 tbsp

Method:

  1. Dry roast the dried coconut with ghee till its golden.
  2. This step is Optional-Once it cooled down transfer it blender and pulse it for few seconds.
  3. Now to make sugar syrup add sugar,jaggery and water in a pan and cook till jaggery melts.
  4. Now strain the syrup to remove impurities.
  5. Cook the syrup till it become thick foamy syrup.
  6. Check the consistency by driping the sugar syrup in cold water.
  7. You should get thick firm ball.So keep cooking to get the correct consistency.
  8. Once the sugar syrup is ready add in the roasted coconut and mix well.
  9. Transfer it to a greased plate and spread the mixture.
  10. Once it cooled down ,cut into desired shape and serve.

Notes:

  • To make Dried Coconut:Dry the grated coconut in sunlight for 1 or 2 days or dry roast the grated coconut in pam till it become dry.
  • While roasting the coconut make sure to mix often as it burn quickly.
