Panna Cotta With Strawberry Sauce

PannaCotta With Strawberry Sauce

Recipe Cuisine: Indian | Recipe Category: Dessert
Preparation Time:1 day | Serves: 4-5

Ingredients


Heavy Cream - 1 1/2 Cup

Milk - 1 1/2 Cup (Full Fat)

Gelatin - 1 tbsp

Lemon Peel - few

Sugar - 1/2 Cup

Vanila - 1 tsp

For Strawberry Sauce


Strawberry - 1/2 Cup (Fresh or Frozen)

Sugar - 2 to 3 Tbsp

Lemon - 1 tsp(op)

Corn Flour - 1/2 tsp

Method:

  1. Soak gelatin by mixing gelatin and few tbsp of water.Keep it aside.
  2. In a milk pan add cream,milk,lemon peel ,sugar and mix well.
  3. When it strated boiling switch off , add in the gelatin and mix well till it dissolve completely.
  4. Now add vanila and give a quick stir.Allow it to cool a bit.
  5. Strain the cream and milk liqquid to remove any gelatin lumps and lemon peel.
  6. Now pour the cream liquid into ramekins or small cups and refridgerate for minimum of 8 hours or over night.
  7. After 8 hours ,to remove the set pannacotta run a knife around the ramekin and also keep the ramekin in hot water for 10 - 15 sec to remove the bottom layer. .
  8. Serve the pannacotta with or without strawberry sauce.

For Strawberry Sauce

  1. In a mixer add the thawed or fresh strawberries,lemon,sugar and blend to a fine puree.
  2. Strain the puree and cook it till it strat boiling.
  3. Now mix the corn flour with water and add the mixture to the puree.
  4. Mix well and cook till it become thick and saucy.
  5. You can also add soaked gelatin at this point to set the starwberry sauce on top of panna cotta.

Notes:

  • If using Frozen strawberry ,thaw to room temperature before using it.
  • reduce sugar as per your taste.
  • Using lemon peel is optional here , but it give nice flavour. You can also replace it with orange peel.
  • instead of strawberry sauce u can use gelatin in th sauce and set on top of panna cotta.
  • Replace strawberry with any fruit (mango,raspberry,blueberry,etc).

Basundhi | Basandhi

           Basundhi | Basandhi is a creamy rabdi kind of milk dessert, Which takes almost 1 to 1 1/2 hour but still worth for it.People who likes milk sweets will be fond of if they tasted it once. I am not big fan of sweets ,but i love milk sweets especially palkova ,rasagulla & jamun.I tasted this dessert for the first time in my frnd Ams Karthic House. Its was our college final year , he invited me and my frnd Vini to his house for lunch(Birthday lunch).His mom prepared basundhi for us.Really his mom is a great cook i liked everything she prepared even cocunut rice(she said its prepared from orange color full fat "aavin Milk").From that day i was asking him to get basundhi from his mom but still i didnt get.I was in touch with him till my marriage after that got busy with my kid.

      So i want to dedicate this recipe to my Dear frnd Ams Karthic:) 

      This is my 50th recipe in my blog ,so i want to make sweet and prepared it a month back.But as i am in vacation i couldnt post .Enjoy this delicious dessert..



    



Basundhi

Recipe Cuisine: Indian  |  Recipe Category: Dessert
Preparation Time:90 mins  | Serves: 5

Ingredients


Full Fat Milk-1 liter

Sugar-1/2 cup

Saffron- 1 pinch

Chironji / Sara paruppu - 2 tbsp(op)

Alomonds/ Pista for decoration

Method:

  1. In a wide thick bottom pan add the milk and allow it to boil.
  2. Once it starts boiling reduce the flame to low .now a thin milk layer will be formed on the top ,take the layer and apply it on the side of the pan using a spoon(refer the pic)
  3. 2 add
  4. Repeat the same till the milk is reduce to 1/4 (use a plate like a hand fan on top of the pan to make the layer fast)
  5. 2 add
  6. Once the milk is reduced add in the sugar ,saffron,sara paruppu and mix well,now close the lid for 5 mins(this step is to steam the layer on the side of the pan ,so that it will come of easily).
  7. 2 add
  8. Switch of the flame.
  9. Now using a flat spoon remove the milk layers on the side into the reduced milk and mix well.
  10. Best in taste when served chill.

Notes:

    • Add or reduce the sugar as per taste.
    • Make sure not to reduce the milk too much bcoz it get thick when it comes to room temperature.
    • Always use a clean pan.as we are applying the layers on the side of the pan ,while removing the milk layers it will get dirt from the side of pan
    • sara paruppu is optional,but gives nice flavour than other nuts.

Carrot Kheer | Carrot Payasam

         Yummy Carrot Kheer | Carrot Payasam is an easy to make among other payasam.Usually i do fast for Shasti Viratham and when ever i am late for 12 noon pooja (as i have a toddler at home),i prepare this carrot kheer or semiya payasam to finish my fasting.So simple and different than the usual purupu or semiya payasam.

    



Carrot Kheer | Carrot Payasam

Recipe Cuisine: Indian  |  Recipe Category: Desert
Preparation Time:20 mins  | Serves: 3

Ingredients


Carrot-2 (medium)

Milk-2 glass | 2 cups

Cashew-6

Almonds-8

Elachi-3

Ghee-4 tbsp

Sugar-1/4 cup or more

Method:

  1. Grate the carrot using very fine grater and no need to boil milk you can add directly.
  2. 2 add
  3. Add the almonds in a hot water and soak for few mins then peel the skin off and grind with elachi into a fine paste(add few water) .
  4. 2 add
  5. In a pan add 2 tbsp of ghee and fry the carrot till its reduced and cooked.
  6. 2 add
  7. Now add in the milk then ground paste and mix well.
  8. Once the milk started boiling reduce the flame to simmer and in a small pan add ghee & fry the cashew , raisins and pour it .
  9. Serve hot or chilled.Today i made a watery chilled version for kheer.

Notes:

    • I used ginger garlic grater which was very fine.
    • you can also add cashew while grinding the alomnds.
    • Make it watery by adding 1/2 cup water to make kheer.
    • Make it thick if you are serving as a payasam.
    • No need to add any additional color as the carrot itself gives nice orange color.

Home made Fruit Custard | Custard Fruit Dessert

         Fruit Custard is a Delicious and Nutritious dessert which can be easily prepared with Ready made Custard Powder.Actually without Custard powder you can easily make it with simple ingredients which are available at home.Here is the Recipe of "Homemade Fruit Custard"..

    



Fruit Custard

Recipe Cuisine: Indian  |  Recipe Category: Dessert
Preparation Time:20 mins | Serves: 2

Ingredients


Egg yolk-1(only yellow)

Milk-1 cup/glass

Corn flour-2 tbsp

Sugar-3 tbsp(adjust as per taste)

Chopped Fruits/Fruit puree of your choice(Apple,Mango,Pomegranate,Banana,grapes,orange,Strawberry& etc...)

Vanila essence-1 tsp

Chopped nuts(op)

Method:

  1. In a bowl add the egg , milk and whisk till the egg mix completely with the milk.
  2. 2 add
  3. Now add the corn flour ,vanila essence ,sugar and milk well.
  4. 2 add
  5. Now cook the mixture till it is thick like a pudding and remove from the flame.
  6. 2 add
  7. Allow the mixture to thoroughly cool.
  8. Take a bowl add the chopped fruits and pour the custard above the fruits and keep it in the fridge for about 30 mins.
  9. Serve chill ..;)

Notes:

    • You can add water if you want and increase corn flour according to that.
    • If you are giving to the infants ,Add fruit puree instead of chopped.
    • I am not sure ,pineapple gives bitter taste with custard.So try before using it.
    • Vanila essence is not mandatory,its just to omit the egg smell.
