Gun Powder | Idli | Dosa Podi

Gun Powder

Recipe Cuisine: Indian | Recipe Category: Podi's
Preparation Time:20 mins | Serves: 1-2 weeks

Ingredients


Red chilli - 10

Channa dal | Kadalai parupu-1 tbsp

Pepper | Milagu-1 tsp

Urad dal | Ulutham parupu-1 tbsp

Roasted Gram dal | Potukadalai

Rice | Arisi -1 tsp

Sesame seeds | Ellu -1 tsp

Curry Leaves | Karuvepillai- 3 Springs

Dry Coconut | Dessicated-1 tbsp(grated)

Hing | asafoetida- 1 pinch

Salt as per taste

Method:

    2 add
  1. Get ready with all the ingredients ,so you wont miss anything.
  2. 2 add
  3. Step-1 : In a hot pan add whole red chilli,pepper,channa dal ,urad dal and dry roast in a slow flame for 4 mins till it starts brown.
  4. Step-2 : Once it started brown add in the roasted gram dal,rice,sesame seeds and roast till rice started browning.(make sure to continue roasting in a slow flame).
  5. 2 add
  6. Step-3 : Now add in the grated dry cocunut and give a quick mix.
  7. Step-4 : Add the curry leaves and roast till the curry leaves turn crispy.
  8. 2 add
  9. Step-5 : Switch off the flame and add hing & salt.
  10. Step-6 : Now transfer it to a plate and allow it to cool.
  11. Step-7 : Once cooled put it in a blender and make a coarse powder.

Notes:

  • Adjust red chilli as per taste.10 chiilies were bit spicy for me(i used 5 round chilli & 5 Kashmiri red chilli).
  • Serve with Gingelly oil or Ghee.

Mysore Masala Dosa

As i said earlier being in bangalore for more than 3 year,i have not tasted any famous karnataka's food except rava idli in Adigas,but my hubby did. When ever i ask him wat shall i prepare for breakfast or dinner?(many of you might asked the same to ur hubby's),the reply was always same(do something) ,but when we go out for dinner,he will be very spaecific about wat he wants to eat(biriyani always or parota or mysore dosa). I had a mind voice (may be he likes mysore dosa very much)and thought of trying that to impress him,it came out very well. Instead of preparing the same dosa ,onion dosa,podi dosau can try this mysore dosa with tangy & sweet red chutney.

Actually i have given seperate dosa batter recipe here but its not mandatory , you can do this with daily dosa batter too(i do the same when i am lazy).

Mysore Masala Dosa

Preparation Time:30 mins | Serves: 3-4

Ingredients for Dosa batter


Raw Rice-1 Cup

Idli Rice-1 Cup

Urad dal-1/2 cup

Poha/Aval-1/4 cup or 3 tbsp

Channa dal-1/4 cup or 3 tbsp

Toor dal-1/4 cup or 3 tbsp

Methi seeds-1 tsp

Salt as needed

Ingredients for Red chutney


Roasted gram dal/potukadalai-1/4 cup

Grated cocunut-1/4 cup

Red chilli-5-6

Onion-1(small)

Garlic-3 pods

Tamrind-small ball size

Jaggery or sugar- 1 tbsp

Oil -1 tbsp

Salt as per taste

Onion-1 or 2 (chopped for dosa)

Method:

    2 add
  1. Soak rice,toor dal,channa dal,methi seeds for 5-6 hrs.soak urad dal for 1 hour.
  2. Grind like regular dosa batter consistency. Now add salt and mix well using hands to ferment fast.
  3. 2 add
  4. Now in a small pan add oil and fry garlic,red chilli seperately.
  5. 2 add
  6. In a mixie jar add all the ingredients given under red chutney section(gram dal,cocunut,tamrind,sugar,onion,fryrd garlic,chilli,salt) and grind into a smooth paste and keep aside.
  7. 2 add
  8. Now in a dosa tawa spread 1 or 2 laddle of batter and make dosa.
  9. Add 1 or 2 tbsp of red chutney and spread around the dosa and drizzle some onion and oil and cook it by covering wit lid.
  10. 2 add
  11. Mysore masala dosa is ready,Serve it with potato masala | Cocunut Chutney |Sambar.

Notes:

  • You can also add oly idli rice or parboiled rice too.But adding raw will make crispy dosa's.
  • Adding channa dal,toordal to the dosa batter gives nice color to the dosa(ref pic).
  • You can also skip the garlic and make chutney without frying chilli(to save time).

Ragi Dosa

 


Ragi Dosa

Preparation Time:45 mins | Serves: 2

Ingredients


Ragi-1 1/2 cup(makes 5-6 dosa)

Onion-1

Green chilli-1

Curry Leaves- few

Water 1 1/2 cup

Salt

Mustard-1/4 tsp

Oil

Method:

  1. Mix the Ragi with water and salt into dosa batter consistency.
  2. 2 add
  3. Chop the onion,G.chilli,curry leaves finelly.
  4. In a hot pan add oil then add mustard,once the mustard splutters add onion,chilli,curry leaves and cook till transulent. *.
  5. Add the onion to ragi batter , mix well and keep it aside.
  6. 2 add
  7. Let the batter sit in room temperature for minimum of 1 hour.
  8. After one hour add some water if neccessary and make dosa's in medium flame.
  9. 2 add
  10. Add some oil around and top of the dosa cook by covering with lid.
  11. Once the dosa changed color then turn it to the other side and cook for some time .
  12. Serve with any tangy and spicy chutney's or simply have the dosa.

Notes:

  • cooking of onion is not neccesary but it gives nice flavour to the dosa.
  • If your dosa breaks while turning ,then it mean u have to add some more water.
  • Dont make too runny also.
  • Cook ragi properly in medium flame.Uncooked dosa will upset your tummy.
