Kambu Idli | Bajra Idli |Pearl Millet Idli

Kambu idli |Bajra Idli | Pearl Millet Idli is a perfect healthy food.If you are a diet conscious or diabetic patient ,then this steamed ildis are perfect to replace rice.This recipe is same as normal idli batter just use 1 : 1 ratio thats it. Not only idli you can make kambu dosa's too with the same batter...

Kambu | Bajra Idli

Preparation Time:16 tp 20 hrs | Serves: 1 week

Ingredients


Bajra | Kambu | Pearl Millet - 1 Cup

Idli Rice | Raw Rice | Pacharisi- 1 Cup

Urad dal | Ulundhu - 1/2 Cup

Fenugreek | Methi | Vendhayam - 1/2 tsp

Salt

Idli soda | Eno fruit salt - Optional

Method:

  1. Soak idli rice & Bajra together and urad dal and methi seeds together.Wash it well before soaking.Let it soak for 4-5 hours or to over night.
  2. If you are soaking over night ,wash it well before grinding.
  3. Grind into smooth and fluffy batter.The grinding procedure is same as normal idli, you can grind everything together or urad dal first and rice & bajra later.
  4. Once done allow it to ferment overnight or min of 6 to 8 hours.
  5. Now take the required quantity of batter add salt and make idli's as usual.
  6. I make this with Parupu thogayal and we love this.....

Notes:

  • Use good quality of urad dal for better result.
  • For softer anf fluffy idli use Idli soda | Eno fruit salt and it is purely optional.
