         Got this recipe from Spill the Spice blog.Actually i got tempted by the picture and tryed this. And it was yum ,goes well with rasam or as a side dish to all.

    


Brinjal Kara Curry

Ingredients


long brinjal-7to8(any color)

Tamrind Juice-3 tbsp

Turmeric-1/4 tsp

Sambar Pwdr-1/2 tsp

Salt as per taste

oil-2 tbsp

Mustard-1/2 tsp

Urad dal-1 tsp

Hing/asafoetida

Curry Leaves -1 strand

To Grind

Cocunut-3 tbsp

Red chilli-1

Small onion-4

Garlic-2(big)

Fennel/Sombu-1/2 tsp

Coriander Seeds-1/2 tsp

Method:

  1. Take a bowl full of water ,Cut the brinjal into 1/2 inch round slices and add it into water(to avoid browning).
  2. Soak tamrind and extract 3 to 4 tbsp of juice
  3. Grind everything from "to grind" section into coarse without any water.
  4. In a pan or kadai add oil , mustard ,when it splutters add urad dal,hing,curry leaves and fry till golden brown.
  5. Now add the brinjal and fry for 2 -3 mins .Then add turmeric and salt give a quick stir.
  6. Now add the tamrind juice ,mix well and cook by covering the lid ,reduce the flame to low and cook till the brinjal is tender,dont forget to stir in between.
  7. Now add the sambar pwdr and adjust the salt ,give a quick stir.Then add the ground paste and mix twice and toss it instead of mixing till the masala is cooked and coated well.For abt 4 to 5 mins
  8. Now switch of and serve with rasam or curd rice /Any variety rice.

Notes:

    • Dont mix too much once the brinjal is cooked ,instead toss it using the side handles(or use a pan ).
