Ragi Murukku Recipe | Kelvaragu Murukku | Finger Millet Murukku

Ragi Murukku. Ragi also called as Kelveragu | Kepai | Finger millet | Ragulu |Mandua is a gluten free crop and unique from others.As Ragi is rich in calcium ,so its perfect healthy snack.

Ragi Murukku

Recipe Cuisine: Indian | Recipe Category: Snacks
Preparation Time:30 mins | Serves: 3- 4 person

Ingredients


Ragi flour-1 Cup

Rice flour-1/2 Cup

G & G paste - 1/2 tsp(op)

Red chilli powder- 1/2 tsp(op)

Cumin | Sesame seeds |Ajwain-1/2-1 tsp

Turmeric powder- 1/4 tsp

Salt

Butter | Ghee | Dalda | Vanaspathi- 2 tbsp

Hot oil-1 tbsp

Oil for deep frying

Method:

    2 add
  1. In a bowl mix all the ingredients except hot oil and mix well.
  2. 2 add
  3. In a heavy bottom pan heat the oil for deep fry.
  4. 2 add
  5. Now slowly add water and make a soft dough.
  6. 2 add
  7. Add 1 tbsp of hot oil to dough and knead well.Adjust the salt if neccesary.
  8. Now add a pinch of dough to check whether the oil is hot enough or not.Always the batter should rise to top as soon as u put in oil.
  9. 2 add
  10. Use any murukku press hold,i used star and prees the murukku in ladle oe press directly to the oil.
  11. Flip and cook on both the side til the sizzle sound stops.
  12. 2 add
  13. Drain it in a paper towel.

Notes:

  • I used store bought idiyappam rice flour and ragi flour.Use home made rice flour for more crispiness.Click here for how to make home made Rice flour
  • Feel free to replace spices as of your choice like sesame seeds(ellu),ajwain {omam},cumin(zeera),chillipowder,garam masala ,crushed garlic,g&g paste depends on your creativity
  • Always do test on the oil before frying.
  • If your murukku batter breaks while pressing then ,it mean you need to add few tsp of water to make it smooth.Usually ragi flour tends to break easily fr most recipe,so its difficult for few to get shapes.If you want to get perfect shape use warm water instead of cool water.
  • If your murukku absorb lot of oil then it means more water in the dough,adjust by adding some rice flour

Ulundu Murukku | Urad dal Murukku | Arisi Murukku

Urad dal Murukku | Ulundu Murukku | Arisi Murukku Home made is always healthy .Making a small batch is so easy than cooking dinner.

I have used only 1 cup idiyappam flour in which i got 15 murukkus. . Do try and share your comments as well as recipe pics... 


Ulundu Murukku | Uraddal Murukku

Recipe Cuisine: Indian | Recipe Category: Snacks
Preparation Time:30 mins | Serves: 15- 30 Pieces

Ingredients


Rice flour | Raw rice flour-1 cup

Urad dal Flour- 1 tbsp

Ajwain | Omam | Sesame seeds | Cumin- 1 tsp

Butter 1 tbsp

Hot oil- 1 tbsp

salt

oil for deep frying

Method:

  1. For urad dal batter,dry roast 1 tbsp of urad dal and grind it into a fine powder.
  2. In a bowl add all the ingredients(rice flour,urad dal flour,ajwain,butter,salt) except hot oil and mix well.
  3. Mean while heat the oil for deep fry.
  4. Now slowly add water and make a soft dough.
  5. 2 add
  6. Now add in 1 tbsp of hot oil and knead again.make sure to adjust the salt.
  7. 2 add
  8. Now add a small pinch of murukku batter and check whether the oil is hot enough.It should rise on the top as soon as you put in oil.
  9. 2 add
  10. Using a star hole .Make a batch in a ladle or press directly to the oil.
  11. Fry on both the sized till the sizzle sound stops.
  12. 2 add
  13. Drain it on paper towel and serve once cooled down.
  14. Keep th emurukku in airtight box or stainless steal container to retain the crispiness.

Notes:

  • I have used store bought urad dal powder,if you dont have make a home made one, by dry roast the urad dal and make powder out of it.
  • Feel free to replace spices as of your choice like sesame seeds(ellu),ajwain {omam},cumin(zeera),chillipowder,garam masala ,crushed garlic,g&g paste depends on your creativity.
  • Always do test on the oil before frying.
  • I have used idiyappam flour,you can use raw rice flour,normal store bought rice flour also..but Homemade raw rice flour is the best one.
  • If your murukku batter breaks while pressing then ,it mean you need to add few tsp of water to make it smooth.
  • If your murukku absorb lot of oil then it means more water in the dough,adjust by adding some rice flour.

Pottukadalai Murukku | Gram Dal Murukku | Rice flour Murukku with Pottukadalai

Gram Dal Murukku | Pottukadalai Murukku .Here in Singapore you wont get a perfect tamilnadu style murukku.So i make murukku often previously,but in recent day we totally forget to about that.After my hubby's recent trip to India,My LO at the stage to taste more snacks than food,wanted to eat different snacks and bored of repeated snacks.Its healthy and home made.

 I have used 5:1 ratio i,e,5 cups rice flour to 1 cup gram dal flour.If you want you can add 1 tbsp of butter | Ghee to increase the taste,but i have added only 1 tbsp of hot oil ,which helps to increase the crispiness.

Pottukadalai Murukku | Gram Dal Murukku

Recipe Cuisine: Indian | Recipe Category: Indian Snacks
Preparation Time:30 mins | Serves: 3-4

Ingredients


Rice Flour - 1 1/4 Cup

Pottukadalai| Gram dal Flour- 1/4 Cup

Sesame Seeds | Ajwain- 1 tbsp

Hing a pinch

Butter | Ghee (optional)- 1 tbsp

Salt as per taste

Hot oil- 1 tbsp

Oil for Deep Fry

Method:

  1. For Gram dal Powder: In a mixer Jar add 1/4 of Gram dal| Pottukadali and make a fine powder and sieve it
  2. In a wide bowl add rice flour,roasted gram dal flour (pottukadalai),salt,sesame seeds,pinch of hing and mix everything well.
  3. 2 add
  4. Now add in the water slowly and mix well till u get a smooth dough.
  5. Now add in 1 tbsp of hot oil and mix well again.
  6. Now using any murukku presser press the murukku in a ladle or press directly to the oil..
  7. 2 add
  8. Fry the murukku till the oil sizzle stops and drain it into a paper towel.
  9. 2 add
  10. Keep the murukku in a airtight container to retain the crispiness for long.

Notes:

  • The ration given here 5:1 ratio.It means for 5 cup rice flour use 1 cup gram dal flour.
  • I have used store bought idiyappam flour,home made raw rice flour is the best one,but you can try this with normal rice flour too...
  • You can use white sesame,black sesame ,ajwain, or cumin too.
  • You can also add redchili powder or home made red chili paste ,pepper powder or garlic as per your preference.
  • My murukku press hole is very small,so it take only 1 min for each batch to cook.Cooking time may differ depends on the hole size.
