Ulundu Murukku | Uraddal Murukku

Ingredients
Rice flour | Raw rice flour-1 cup
Urad dal Flour- 1 tbsp
Ajwain | Omam | Sesame seeds | Cumin- 1 tsp
Butter 1 tbsp
Hot oil- 1 tbsp
salt
oil for deep frying

Method:
- For urad dal batter,dry roast 1 tbsp of urad dal and grind it into a fine powder.
- In a bowl add all the ingredients(rice flour,urad dal flour,ajwain,butter,salt) except hot oil and mix well.
- Mean while heat the oil for deep fry.
- Now slowly add water and make a soft dough.
- Now add in 1 tbsp of hot oil and knead again.make sure to adjust the salt.
- Now add a small pinch of murukku batter and check whether the oil is hot enough.It should rise on the top as soon as you put in oil.
- Using a star hole .Make a batch in a ladle or press directly to the oil.
- Fry on both the sized till the sizzle sound stops.
- Drain it on paper towel and serve once cooled down.
- Keep th emurukku in airtight box or stainless steal container to retain the crispiness.
Notes:
- I have used store bought urad dal powder,if you dont have make a home made one, by dry roast the urad dal and make powder out of it.
- Feel free to replace spices as of your choice like sesame seeds(ellu),ajwain {omam},cumin(zeera),chillipowder,garam masala ,crushed garlic,g&g paste depends on your creativity.
- Always do test on the oil before frying.
- I have used idiyappam flour,you can use raw rice flour,normal store bought rice flour also..but Homemade raw rice flour is the best one.
- If your murukku batter breaks while pressing then ,it mean you need to add few tsp of water to make it smooth.
- If your murukku absorb lot of oil then it means more water in the dough,adjust by adding some rice flour.
