Basic Sponge cake

Simple Sponge cake but this the basic cake recipe, we are going used for most of the upcoming cakes.Than cooking i love baking very much from my child hood, Actually my father had a bakery ,we wont make it but will get it from outside.May be bcoz of this i am so fond baking.

Previously i use to try few baking recipes using microwave and cooker method. My first attempt of trying some bread recipe which i got it from TLC Channel ,the dough came very well but ,i dono that i need to use convention oven for that and result was burnt and smoke all over the house.After that I started cooker method to try Baklava recipe for my Hubby's birthday as he likes it very much and it came OK(not so good ).Finally i got my simple convention oven few months back to explore baking world and this is my second baking post and will keep posting.

Basic Sponge Cake

Recipe Cuisine: Indian | Recipe Category: Baking
Preparation Time:1 hour | Serves: 5-6

Ingredients


Egg-6

Plain flour-1 cup

Baking powder-1/2 tsp

Sugar-1 cup(powder it)

Salt a pinch

Vanilla essence-1 tsp

Cream of tartar-1/2 tsp(op)

Milk - 1/4 cup

Butter /Sunflower oil-2 tbsp

Method:

    2 add
  1. Separate egg yolk and egg white in 2 separate bowls.
  2. In egg yolk add in sugar powder ,butter ,vanilla essence and mix well and sieve in the flour and baking powder.
  3. 2 add
  4. Add milk to adjust the thickness of the batter and keep aside.
  5. Now preheat the oven for 10-15 mins in 175- 200 degree Celsius.
  6. Now using a electric hand blender whisk the egg white ,cream of tartar,salt in low speed till u get bubbles and after that turn to high speed.
  7. Blend it till u get stiff peaks(ref pic).
  8. 2 add
  9. Now add the frothy egg white in 4 batches to the flour & egg yolk mixture one by one and mix gently(this step helps to get Aeration-air is circulated through the mixture).
  10. Now grease the square cookie tray or pan with butter and dust it with plain flour or use butter or parchment paper.
  11. 2 add
  12. And pour the cake batter in the pan and tap the tray gently (10 times) to remove bubbles and crack in the cake.
  13. 2 add
  14. Now keep the tray in oven and bake the cake for 30 - 40 mins or insert a stick inside the cake and if it comes clean ,the cake is ready.
  15. 2 add
  16. Allow the cake to cool.and apply your favorite frosting on top.

Tips and Tricks:

  • After adding frothy egg white to the flour mixture don't wait for long. That's y its good to preheat oven while u start whisk the egg white.
  • Cream of tartar is not mandatory but it will help to hold the stiffness of the frothy egg white which helps in spongy cake.
  • Instead of electric blender u can use whisk also but it will take more time.
  • I have not added butter or oil to my cake(on diet;)) still it came yummm.
  • Adding butter gives richness and softness to the cake ,but while refrigerating the cake the butter makes the cake hard.
  • Adding oil gives softness and it wont make the cake hard even after refrigeration.
  • Actually i made this sponge cake today to make Swiss roll, but due to some reason i couldn't made square sponge cakes.

Egg Biriyani | Egg Dum Biriyani | Mutta Biriyani

Egg Dum Biriyani

Preparation Time:40 mins  | Serves: 2

To Marinate Egg


Egg-2

Ginger garlic paste-1/2 tbsp

Red chilli pwdr-1 tsp(i used kashmiri chilli pwdr)

turmeric-1/4 tsp

salt

oil if needed

For Rice


Basmathi Rice-1 & 1/4 Cup

Green chilli-2

Zeera/Cumin-1 tsp

Elachi-3

Cinnamon-2

Cloves-3

Water-5 cups

Salt

Ingredients


Onion-2

Tomato-1

Ginger & Garlic paste-1 tsp

Curd-2 tbsp

Turmeric a pinch

Garam masala-1/2 tsp

Red chilli pwdr-1 tbsp(i used kashmiri chilli pwdr)

mint leaves-3 tbsp(chopped)

Coriander leaves-3 tbsp(chopped)

Salt as per taste

Oil

Method:

  1. Boil the egg and remove the outer shell.And give lengthwise cuts(6) on the side of the egg/
  2. Now mix the g&g paste,chilli pwdr,turmeric,salt and apply it on the egg and keep aside
  3. 2 add
  4. In a big pan add water green chili,salt,cloves,cinnamon,elachi,cumin and boil it.Once it started boiling add the rice.
  5. After adding the rice ,wait til it starts boiling,once its boiling nicely wait for 3 more mins and check whether the rice is 80 % done.
  6. Then remove from stove and strain the water and keep it aside.
  7. 2 add
  8. Cut the onion in lengthwise.In pan add 4 tbsp of oil and add the onions and fry till its fully reduced and golden brown.
  9. Keep the fried onions aside.and in the same pan add the marinated egg and the remaining paste.
  10. 2 add
  11. keep the flame in medium low & fry till the g&g paste is cooked and keep it aside(do not overcook the eggs) .
  12. Now in a wide pan add oil then g&g paste and fry for 15 secs then add tomatoes and cook till mushy.
  13. 2 add
  14. Now add the turmeric,chillipwdr,garam masala and fry for 20 secs.
  15. Add the curd,salt and cook till oil seperates and keep the flame low(make sure the gravy covered the bottom of the pan fully).
  16. Sprinkle half of the coriander,mint,fried onions and keep the eggs also and cover it with half of the rice and sprinkle some garam masala and ghee top .
  17. 2 add
  18. repeat with the process with remaining onion ,mint,coriander and cover it with rice.
  19. Now add turmeric ,milk-5 tbsp and sprinkle it over the rice.
  20. 2 add
  21. Add some ghee also on top and cover it with lid.
  22. Let it be in dum for 10 mins and switch off the flame

Notes:

    • Dont skip the green chilli in the rice,as i am using kasmiri chilli all over,if u skip green chilli then the biriyani wont hav spicyness.
    • The caramelized onion is the highlight in this biriyani.people like onion flavour loves this.
    • Serve with any raitha.

  Usually i make palak paneer or Aloo palak with palak leaves.But Shn dont lik these gravies,As der are rich in nutrients i wanted her to take this.Then i saw "hara bhara kabab" in vijay tv and tryed that,but still she is not having much.One day when we had a chat with my friend abt the dinner at home was palak paneer , she suggested that palak with egg varuval will be good try once and it came out very well even shn liked it.So i want to share with you all.   


Palak Egg bhurji

Ingredients


Palak leaves-1/4

Egg-3

Big onion-1

Green chilli-1

Curry leaves-few

Urad dal-1 tsp

Channa dal-1 tsp

Mustard-1 tsp

Turmeric-1 tsp

Oil and salt.

Pepper pwdr-1/2 tsp(op)

Method:

  1. Chop palak and onion finelly.
  2. 2 add
  3. In a pan add oil then mustard,urad dal and channadal once the mustard splutter ,add onion ,curry leaves and green chilli.
  4. 2 add
  5. Once the onion is transulent ,add palak and cook till the leaves cooked & add turmeric,mix well .
  6. 2 add
  7. Beat the egg in a bowl with required salt.
  8. 2 add
  9. Now add the egg to the cooked palak.Scramble well and cook till egg is done.
  10. 2 add
  11. Now add pepper pwdr and mix well.Serve hot.

Notes:

    • You can also use till ½ bunch palak leaves.
    • Its not necessray to remove the middle stem of palak leaves.
    • Generally I use aluminum or indolium kadai for porriyal’s and varuval’s.
