Idiyappam | Sevai and Coconut Milk

Ingredients
Idiyappam | Rice flour - 1 cup
Hot water- 1 cup + more as needed

For Coconut Milk:
Coconut -1 (med )
Sugar/Jaggery as needed

- I am using idiyappam flour here, so no need to add salt or dry roast.But if you are using rice flour then u have to add salt and dry roast till all the moisture evaporated and make sure dont brown or change the color of rice four.
- Make sure the water is rolling boil and add it to the rice flour slowly and mix well till you get a smooth mixture .Once its warm enough to hold in hands,knead it to a soft dough.
- Now in a idli pan add enough water and allow it to heat ,and keep ready with idli steamer plate or idiyappam plate by greasing it with oil or use banana leaf.
- Now take a portion of the dough and place it in a idiyappam press | Muruku press and start pressing it to the plate .
- Once done close the lid and allow it to cook till done(it may take 10-15 mins).
- Repeat the same for remaining dough(when the dough is not in use always cover it with a wet cloth).
- Grind the coconut and elachi together and take the 1st thick milk,And repeat the process for 2nd and 3rd milk.
- Now mix the sugar | jaggery to it and serve with idiyapam.
- You may not using all the milk , so reserve some milk before adding sugar and use it for any other recipes. .

- You can also make sweet idiyappam by adding grated coconut and jaggery also serve it with banana too.
- Can also prepare Savoury idiyapam like Lemon idiyapam,Tomato idiyappam, cocunut idiyappam and Tamrind idiyappam.
