Dhivis Pantry-Veg Cutlet | Veg Patties

Veg Cutlet | Veg Patties are all time favourite snack.I have used many veggies as i am preparing for my kid,but the original recipe contains 1 or 2 veggies oly. Usually i saw many recipes and video clips before attempting a recipe,But for me it came very well with out adding bread crumbs or gram flour also i use to prepare this in large quantity says 30 patties and store it in freezer,as i am giving my LO shn often.I have given 2 measurements in this page one is for making 28-30 patties another one is for 
making 8 patties(given at the end of page).
Goes yumm with ketchup or Kache amki chutney.Here is the Cutlet Recipe from Dhivis Pantry.Try and let me know your comments . 


Vegetable Cutlet | Vegetable Patties

Preparation Time:30 mins | Serves: 15

Ingredients for 30 Patties


Potato -7

Mixed Vegetable-7-8 cups(ref notes)

Paneer-1/2 cup(op)

Onion-2

G&G paste-1-2 tbsp

Green chilli-2

Coriander Leaves-few

Red Chilli Powder-1 tbsp

Coriander pwdr-1 tbsp

Garam masala/Chat masala-1/2 tbsp(op)

Turmeric powder-1/2 tsp

Zeera/cumin-1 tbsp

Sombu/fennel-1 tbsp

Oil-4 tbsp

Egg-1 or Maida-2 tbsp

Bread crumbs-as needed

Oil for deep frying

Method:

  1. Cook the potato in whole in a big pan (dont cut).
  2. 2 add
  3. As soon as the potato is fully cooked remove the potatoes from water so there will be no water in potato.
  4. Once the potato reaches room temperature, peel the skin and smash or grate it & keep aside.
  5. Chop all veggies,onion ,g.chilli,coriander as fine as possible and keep ready .
  6. In a hot pan add oil then zeera,sombu once splutter add onion and cook till transulent.
  7. 2 add
  8. Now add G & G paste and cook for 1 min and add g.chilli and cook for 1 min..
  9. Now add all the veggies(except coriander,paneer,spring onion if u are using).
  10. Mix well and reduce the flame to med-low and cook it by covering (check in between).
  11. 2 add
  12. After 5 mins add all the spices, salt and mix well and cook by covering for another 5 mins til the veggies are done(no need to cook the veggies fully as we are going deep fry it).
  13. Now mix for some more time without covering lid to remove extra moisture from the veggies.
  14. Switch off the stove and allow it to cool.
  15. 2 add
  16. Now add coriander ,mixed veg masala to the potato and mix well to make patties(add powdered bread or gram flour or bread crumbs if the masala is sticky).
  17. Now make a ball and mold it into coin or desired shape and keep aside.
  18. 2 add
  19. In a bowl whisk the egg or maida with water to coat the patties.
  20. Now take the patties and dig it in egg and coat it with bread crumbs and arrange it in a plate.
  21. Make sure the patties are even on both the side for even browning.
  22. 2 add
  23. Now deep fry the patties in a hot oil or shallow fry in tava with some oil .
  24. Veg cutlet is ready.Serve it with ketchup + chopped onion on it or Kache amki chutney.

Notes:

  • There are many ways to prepare cutlet.If u are not using more quantity of veggies then its very easy to prepare.but the problem arises when u use too many veggies,as it will make sticky.
  • Thats y i have given step by step tips to make perfect cutlet for adding  many veggies in cutlet.
  • Cook potato as a whole without cutting to reduce water in patties
  • instead smashing grate the cooked potato to make lump free patties.
  • I have used around (half small brocolli,carrot-1,betroot-1/2,asparagas-2,baby corn-6,beans-6-7,cabbage -1/4,peas- 1/4 cup,spring onions,paneer-1/4 cup, onion-1,g.chilli-1).You can also add some spinach ,corn and etc...
  • Dry roast the fennel/sombu and add it (i am lazy ,so add while tempering).
  • adding chat masala gives nice taste.I avoided that as i am preparing for my LO.
  • I saw some recipe where u can steam cook the veggies and add it the potato and u can skip the cooking with masala part(but u hav to use bread pwdr or bread crums or gram flour to make a non sticky masala.
  • And in one more pressure cook the veggies and strain the water,then grind the veggies and using a cloth sqeeze excess water.

How to freeze the Patties

    2 add
  1. After molding the patties into coin shapes.
  2. keep the patties in a plate and freeze it for 1 hour.
  3. Then transfer the frozen patties into a freezer bag and upto 1 month or more.
  4. Before cooking the patties allow it to thawn(room temperature ) and fry it.

Ingredients for 8 Patties


Potato -2

Mixed Vegetable-1/2 cups

Paneer-few cubes(op)

Onion-1

G&G paste-1 tsp

Green chilli-1

Coriander Leaves-few

Red Chilli Powder-1 tsp

Coriander pwdr-1 tsp

Garam masala/chat masala-1/2 tsp(op)

Zeera/cumin-1 tsp

Sombu/fennel-1 tsp

Turmeric pwdr-1/4 tsp

Oil-2 tbsp
