  A Simple Mushroom Biriyani but delicious,who say no to Biriyani ;)   


Mushroom Biriyani

Ingredients


Mushroom-1 packet

Big Onion-1

Tomato-1

Bay leaf -2

Elachi-1

Coriander leaves

Mint leaves (op)

Basmati rice-1 cup

Oil-5 to 6 spn

Ginger & Garlic paste-1 ½ tbsp

Onion-1/2

Green chilli-1

Cumin-1/2 tsp

Fennel-1/2 tsp

caper(Maarati mokku)-3(small one)(if big 1)

Dagad phool(Kalpasi)-few

Star anise(Anasipu or nakchatiri sombu)-1

Cinnamon-1

Clove -2 to 3

Elachi-1

Javitri-small(op)

Rose petals-few(op)

Method:

  1. Grind the items in the grind section into a fine paste.
  2. Chop onion ,tomato ,mushroom and wash the rice and soak it.
  3. 2 add
  4. In a pan add oil then add bay leaf and elachi,once its fried add the ground paste and cook till raw smell goes in medium flame(to avoid burning keep stirring and add some salt).
  5. 2 add
  6. Now add the onions and once its transparent add tomato and cook till mushy,then add mushroom.
  7. 2 add
  8. Now the mushroom will start leaving water .Cook till all the water evaporate and then add coriander and give a quick stir.
  9. 2 add
  10. Now add 1 ¾ of water and let it boil.
  11. 2 add
  12. Now add the rice and close the lid and keep flame in medium for 2 mins and reduce to low and let it cook for 8 more mins.
  13. Let the lid be closed till you serve
  14. 2 add
  15. Now open the lid slightly and see whether all the water is absorbed as in the picture if so switch off the flame ,else keep for 2 more mins.

Notes:

    • If you don’t have the whole spices you can replace it with home made biryani masala pwdr.
    • Instead of ginger & garlic paste you can also use whole garlic and ginger.
    • While adding bay leaf make sure the oil is not so heat as the leaves will get burn.
